5 gallon all-grain recipeMalts:
11.25 lbs. Maris Otter Pale Malt
1.50 lbs. Munich Malt
0.75 lbs. Rye Malt

1.0 oz. Nugget hops (boil 60 minutes)
0.5 oz. Crystal hops (boil 20 minutes)
1.0 oz. Mt Hood hops (boil 20 minutes)
1 Tablet Carrageenan (Kick, Whirlfloc, or 1 tsp Irish Moss) (boil 15 min)
Yeast:
1.0 oz. Cascade hops (boil 5 minutes)
1.5 oz. Crystal hops (dry hopping)

Imperial A07 Flagship (60°-72°F) -or- Lalbrew BRY-97 (59°-72°F)
Step by step:
Mash this beer at 154°-156° for 60 minutes. Raise temperature of the mash to 165°, (called mash-out temperature) then run off 7 gallons of wort to begin your boil. Boil for 30 minutes without hops, then add 1.00 oz. Nugget hops and begin 60 minute boil. With 20 minutes left in the boil add 0.50 oz. Crystal hops and 1.00 oz. Mt Hood hops. With 15 minutes left in the boil, add 1 Carrageenan tablet. With 5 minutes left in the boil add in 1.00 oz. Cascade hops. Cool your wort, transfer to your fermenter, and pitch your yeast when the temperature of the wort is 75° and 80°F.
Ferment for about 4 days, then "dry hop" by adding 1.50 oz. Crystal hops to your beer (pellets are a littles easier to use in narrow neck fermenters). Ferment until yeast has completed sugar conversion, then allow an additional 3 to 4 days for the diacetyl reduction, and you can bottle or keg your beer. Due to the relatively high alcohol and IBU levels, allow this beer to age a minimum of 2 weeks prior to drinking.

Loowit Brewing Company was opened in 2012 by Devon Bray and Thomas Poffenroth at 507 Columbia Street in Vancouver. The tap room is open 7 days a week with an excellent dedicated staff. Loowit became the first brewery to sell beer at the Vancouver Farmers Market. In 2013, at only 8 months old, Loowit won a Gold Medal in the Fruit Beer category of the Washington Beer Awards for Vandalia Summer Ale. In 2013 Loowit took home 2 more awards from the Washington Beer Awards: Gold for Two-Sixteen Red Ale in the Irish Red Ale category and Bronze for Shimmergloom Stout in the Irish/British Stout category.
Devon and Thomas were 2 of the original brewers in the first 2 of Vancouver’s Mashfest (a beer festival featuring homebrewers pouring beer they have made) in 2011, and now have hosted 3 additional Mashfest’s at their brewery!
