Pumpkin Ale - All-Grain
Pumpkin Ale
Makes 5 gallons
9 lb German Pilsner Malt
½ lb Victory Malt
½ lb Dextrin Malt
½ lb Wheat Malt
1 lb 40L Crystal Malt
1 tsp Irish Moss (boil 60 minutes)
1 oz. Cascade Hops (bittering hop, boil 60 mins)
½ tsp dry Cinnamon (boil 15 mins)
½ tsp dry Cloves (boil 15 mins)
½ tsp dry nutmeg (boil 15 mins)
½ oz Goldings hops (aroma hop, boil 5 min)
¾ cup corn sugar for bottling

Mash this beer at 150° for 45-60 minutes. Raise temperature of mash to 165°, (called mash-out temperature) then run off 7 gallons of wort to begin your 60 minute boil. When boiling starts add 1.00 oz. Cascade hops and boil for 60 minutes. With 15 minutes remaining add 1 Carrageenan Tablet, 0.5 tsp each Cinnamon, Clove, & Nutmeg. With 5 minutes remaining add 0.5 oz. East Kent Golding Hops.
At the end of the boil turn off the heat and cool to pitch temperature. Add yeast when the temperature of your wort is less thatn 70°, and begin fermenting. Around the 5 day mark or when fermentation slows, check the specific gravity of your beer. When final gravity is reached, bottle or keg as desired.
