Makes 5 gallons
Malts & Extracts:
9.0 lbs. Great Western Pale 2-row Malt
0.5 lbs. Crystal 40L Malt
0.5 lbs. Crystal 30L Malt
0.5 lbs. Dextrapils Malt
0.5 lbs. Victory Malt
Hops:
1.00 oz. Willamette hops (boil 60 min)
1 Tablet Carrageenan (Kick, Whirlfloc, or 1 tsp Irish Moss)
0.50 oz. Fuggle hops (boil 15 minutes)
1.00 oz. Fuggle hops (boil 3 minutes)
Yeast:
Imperial A01 House (62° - 70°), Safale S-04 (65° - 78°)
Step by step:
Mash at 154° for 45-60 minutes. Raise temperature of mash to 165°, (called mash-out temperature) then run off 6.5 gallons of wort to begin your 60 minute boil. When wort comes to a boil add 1.00 oz Willamette hops. With 15 minutes remaining in the boil add 1 Carrageenan Tablet and 0.50 oz Fuggle hops. With 3 minutes remaining add 1.00 oz Fuggle hops.
At the end of the boil turn off the heat and cool wort down to desired pitching temperature. Add yeast and begin fermenting. When final gravity is reached, bottle or keg as desired.
